- 500g tagliatelle or fresh pasta
- 250g bacon
- 4 eggs
- Grated Parmesan cheese
- Salt and pepper
Instructions
- Bring a large pot of salted water to a boil and cook the pasta until al dente.
- In a skillet, cook the bacon until crispy; set aside.
- In a bowl, whisk eggs, grated Parmesan, salt, and pepper.
- Drain pasta, reserving some water. Toss with bacon off the heat, add egg mixture, and a splash of pasta water for creaminess. Top with more Parmesan.
