Preparation
Unroll the shortcrust pastry into a pie dish. For best results, let it warm slightly at room temperature to avoid cracking.
Prepare the filling
Crumble the surimi into a bowl. Finely chop the garlic (and onion if desired) and add to the bowl. Whisk in the 3 eggs, fresh cream, milk, a pinch of nutmeg, and season with salt and pepper to taste. Stir in the grated cheese for extra flavor.
Prick the pastry base with a fork. Pour in the filling and bake for 30 minutes at 140°C (thermostat 6).
