Preparation
Begin by rubbing the bottom of a baking dish with one clove of garlic. Wash and prepare the tomatoes, courgettes, eggplants, garlic cloves, and onions. Slice all vegetables into thin, uniform rounds.
Arrange the slices alternately in the dish, interspersing thin garlic slices throughout.
Season with salt and pepper, sprinkle with herbes de Provence, and drizzle generously with olive oil.
Bake in a preheated oven at 180°C (th. 6) for 1h30.
Serve hot, warm, or cold.
