Separate the egg white from the yolk and place the yolk in a bowl. Add the mustard, a drizzle of vinegar, salt, and pepper.
Pierce the peeled garlic clove with a fork, then whisk the ingredients together in one consistent direction for even emulsification.
Gradually drizzle in the oil in a thin, continuous stream while whisking nonstop. The mayonnaise will thicken within seconds. Use as much oil as needed for your desired consistency.
Taste and adjust seasoning if necessary.
