Bearnaise sauce

Ingredients

  • 1/2 cl of red wine
  • 2 shallots, chopped
  • 75g of butter
  • 1 teaspoon of flour
  • Thyme and bay leaves
  • Pepper and salt

Preparation

Put half the butter, the shallots in a saucepan and brown.

Add wine and aromatics. Reduce.

Combine remaining butter and flour and add to sauce.

Cook for a few minutes. Salt and pepper.
