Hearty Homemade Miso Ramen with Bok Choy: An Authentic, Easy Recipe

Ingredients for 2 servings

1 clove garlic
6 shiitake mushrooms
100 g bok choy
1 spring onion
3 tbsp sesame oil
3-4 tbsp soy sauce
500 ml water
2 tbsp dark miso paste
120 g ramen noodles
1 tbsp toasted sesame seeds
1 ramen egg

Preparation

  • Peel and finely chop the garlic. Clean the mushrooms and slice into strips. Wash the bok choy, drain, and cut into strips, separating the green leaves from the white stems. Clean, wash, and slice the spring onion into rings.
  • Heat sesame oil in a pan. Sauté the garlic, mushrooms, and white bok choy stems for 5-6 minutes. Deglaze with 1½ tbsp soy sauce and set aside.
  • Bring 500 ml water to a boil, dissolve the miso paste, and season with the remaining soy sauce.
  • Cook the ramen noodles according to package instructions.
  • Divide the miso broth into bowls and add the noodles. Top with the mushroom-bok choy mixture, green bok choy leaves, spring onions, halved ramen egg, and sesame seeds. Enjoy immediately.
