Authentic Pita with Falafel Recipe from Santé Magazine

Pita with Falafel
Ingredients (serves 6)
– 1 can chickpeas (400 g), drained
– 1 red onion, coarsely chopped
– 1 garlic clove, finely chopped
– 3 tbsp tahini (sesame paste)
– 1 egg, beaten
– 100 g fresh white breadcrumbs
– 2 tbsp fresh coriander
– 1 tsp ground cumin
– 1/2 tsp salt
– 6 large pita breads
– Little gem lettuce, torn into strips
– 12 cherry tomatoes, halved
– 1/2 cucumber, sliced
– Optional: hummus
– Cayenne pepper or paprika

Preparation
Preheat the oven to 180°C (fan 4). For the falafel, blend the chickpeas with the onion and garlic. Stir in tahini, egg, breadcrumbs, coriander, cumin, and salt until well combined. Shape into 18 balls and bake on parchment-lined trays for 15-20 minutes until golden. Toast the pita breads, cool slightly, and stuff with lettuce, tomatoes, and cucumber. Add 3 falafel balls per pita, top with hummus if desired, and finish with cayenne or paprika.
