Recipe:Oysters with Tabasco

Give the oysters taste with delicious Tabasco pepper sauce. You only need a few drops for a lot of extra spice.

Ingredients for 12 oysters
– 12 oysters in shell
– Ice cubes, crushed
– Red TABASCO®
– Lemon wedges

Preparation
Wash the oysters under cold running water to remove dirt and sand. Place the oysters in the ice for an hour so that they are well chilled before opening.

Use a thick oven mitt or tea towel folded in half to hold the oyster and protect your hands. Holding the oyster with one hand, with the hinge facing you, insert the oyster knife into the hinge between the two halves of the shell. Gently pry the blade inwards and make short circular movements. If you notice that the tip of the blade is popping in, you can turn the blade to pry open the oyster. Cut the sphincter with the knife.

Before serving
Use a knife to cut the oyster free from the shell, without losing too much moisture. Discard the top part of the shell. Place the opened oyster on a bed of ice. Sprinkle each oyster with a few drops of TABASCO® and serve with lemon wedges.
