Ingredients for 4 people:
• 2 packs of Aviko Mini Gratins
• 1 aubergine
• 2 courgettes
• 4 medium tomatoes
• 2 red onions
• Garlic-infused olive oil
• 150g Parmesan cheese
• 60g chopped fresh herbs: thyme, parsley, and basil
• Large baking dish
• Oven
Preparation:
• Preheat the oven to 200°C.
• Slice all vegetables into approximately 2.5 cm pieces.
• Arrange the slices in an overlapping roof-tile pattern in a greased baking dish, alternating with the Mini Gratins.
• Drizzle generously with garlic-infused olive oil and thyme leaves.
• Bake for about 20 minutes.
