Ingredients:
• 5 gelatine leaves
• 1 lemon
• 2 sachets of vanilla sugar
• 4 tablespoons white caster sugar
• Lemon aroma
• 500 grams of Greek yogurt 0% fat
• 14 ladyfingers
• Lemon liqueur (Limoncello)
Preparation:
Soak the gelatine leaves in plenty of cold water. Squeeze the lemon.
Mix the yogurt in a bowl with the vanilla sugar, caster sugar, and a drop of lemon aroma. Beat until smooth. Heat the squeezed lemon juice with 1 tablespoon of water in the microwave for 30 seconds. Immediately stir in the drained gelatine leaves. Add this lemon-gelatine mixture to the yogurt while stirring continuously.
Arrange 7 ladyfingers in a glass dish and sprinkle with a little lemon liqueur. Spread half the lemon yogurt mixture over them. Layer the remaining ladyfingers on top, sprinkle with more liqueur, and cover with the rest of the yogurt. Refrigerate for 2 hours to set. Garnish with thin lemon slices around the edge and curls of lemon zest for a vibrant finish.
