Ingredients
– 200 ml (15 tbsp) grapeseed oil
– 3 tbsp Portuguese rub (Oil &Vinegar)
– 5 tbsp French-style roasted potato mix (Oil &Vinegar)
– 500 g orange sweet potatoes
– 500 g waxy potatoes
– 4 spring onions
Preparation method
Preheat the oven to 200°C. Divide the grapeseed oil into two bowls. Stir the Portuguese rub into one bowl and the French potato herbs into the other.
Peel and wash the sweet potatoes. Wash the waxy potatoes, leaving skins on. Cut all potatoes into even fries. Trim and chop the spring onions into chunks.
Toss the sweet potatoes and half the spring onions with the Portuguese rub mixture. Combine the waxy potatoes and remaining spring onions with the French herb mixture.
Heat two large pans and fry each potato mixture separately for 5 minutes until golden and crisp. Transfer to baking trays lined with parchment paper. Bake for 10 minutes until perfected.
