During the busy December season, when dinner plans pile up, elevate your menu with trout with almonds. This classic dish, paired with a fine wine, delivers sophisticated flavors with minimal effort—a favorite among home cooks and chefs alike for its reliability and crowd-pleasing appeal.

Ingredients
Serves 4 (prep time: 15 minutes)
4 trout
salt, pepper
4 tablespoons flour
50 grams butter
2 tablespoons oil
70 grams slivered almonds
lemon juice
1 tablespoon finely chopped parsley

Preparation Steps
Rub the trout with salt and pepper, then lightly coat in flour. Heat the oil and 20 grams of butter in a non-stick pan. Fry over medium heat for 8-10 minutes per side until golden brown. Meanwhile, toast the slivered almonds in a dry frying pan until lightly browned.

Transfer the trout to a serving platter. Wipe the pan clean with kitchen paper, then melt the remaining 30 grams of butter. Stir in lemon juice, parsley, and toasted almonds. Season to taste with salt and pepper, then pour the almond sauce over the trout.

Wine Pairing
A rich Riesling d'Alsace is the perfect match—opt for a Grand Cru Riesling to complement this festive meal.
