Ingredients
- 1 head lettuce
- 1 onion
- 2 tbsp butter, plus extra for greasing
- 1 tsp ground turmeric
- 8 eggs
- 200 ml whipping cream
- 100 ml milk
- Additionally: 20 cm quiche mold (loose bottom preferred)

Preparation
- Preheat oven to 180°C fan. Grease mold with butter. Wash lettuce, separate leaves, spin or pat dry. Peel and chop onion. Melt butter in pan, sauté onion until translucent. Add turmeric, then lettuce (in batches if needed) until wilted.
- Whisk eggs, cream, and milk. Season with salt and pepper. Spread wilted lettuce in mold, pour over egg mixture.
- Bake 40 minutes until firm, golden, and skewer comes out clean (no egg residue).
- Cool slightly, then unmold.
