Oven-Baked Cod with Roasted Asparagus and Honeytomatoes® – Quick & Healthy Recipe

Ingredients

Serves 4

  • 1 tray (180 g) Honeytomatoes®
  • 500 g cod
  • 350 g green asparagus
  • 100 ml garden herb stock
  • 2 tsp olive oil

Preparation Method

  1. Preheat the oven to 200 °C.
  2. Trim the woody ends from the green asparagus. Arrange the asparagus, Honeytomatoes®, and garden herb stock in a baking dish.
  3. Pat the cod fillets dry and cut into 4 pieces. Place over the vegetables, drizzle with olive oil. Bake 15-20 minutes, depending on fish thickness.
  4. Divide cod and vegetables among plates; serve immediately.
