Fresh Tuna and Cucumber Lettuce Wraps: Quick, Healthy Low-Carb Recipe

These crisp lettuce wraps offer a refreshing, low-carb snack or lunch packed with flavor. Feel free to swap the red onion for spring onions or shallots to suit your taste.

INGREDIENTS FOR 4 LETTUCE WRAPS:

  • 1/8 cucumber
  • 1 can of tuna in olive oil
  • 4 snack tomatoes
  • 2 tablespoons mayonnaise (Zaanse, full variety)
  • 1 small red onion
  • 4 large lettuce leaves (e.g. Romaine lettuce)
  • salt and pepper

PREPARATION:

  • Drain the tuna well and flake it with a fork into small pieces.
  • Chop the tomatoes (remove seeds) into small pieces and finely dice the onion.
  • Cut the cucumber into small pieces.
  • Combine all ingredients in a bowl, mix in 2 tablespoons of mayonnaise, and season with salt and pepper to taste.
  • Arrange the lettuce leaves on a plate and divide the tuna mixture evenly among them.
