These crisp lettuce wraps offer a refreshing, low-carb snack or lunch packed with flavor. Feel free to swap the red onion for spring onions or shallots to suit your taste.
INGREDIENTS FOR 4 LETTUCE WRAPS:
- 1/8 cucumber
- 1 can of tuna in olive oil
- 4 snack tomatoes
- 2 tablespoons mayonnaise (Zaanse, full variety)
- 1 small red onion
- 4 large lettuce leaves (e.g. Romaine lettuce)
- salt and pepper

PREPARATION:
- Drain the tuna well and flake it with a fork into small pieces.
- Chop the tomatoes (remove seeds) into small pieces and finely dice the onion.
- Cut the cucumber into small pieces.
- Combine all ingredients in a bowl, mix in 2 tablespoons of mayonnaise, and season with salt and pepper to taste.
- Arrange the lettuce leaves on a plate and divide the tuna mixture evenly among them.
