Crunchy Peanut Butter Granola Bars: Simple Homemade Recipe (Makes 12)

Ingredients for 12 bars

  • 150 g oatmeal
  • 75 g chopped almonds
  • 2 tsp seed mix or sunflower seeds
  • 100 g peanut butter (You can also make your own peanut butter.)
  • 30 g coconut oil
  • 60 g honey
  • 6 g dried cranberries
  • 2 tsp chia seeds
  • 20 g shaved coconut

Instructions

  1. Preheat the oven to 180 degrees.
  2. Line a baking tray with baking paper. Spread the oats, chopped almonds, and sunflower seeds evenly on it. Roast for 10 minutes until golden brown, then transfer the mixture to a bowl.
  3. In a saucepan, gently heat the peanut butter, coconut oil, and honey. Stir until fully melted and smooth.
  4. Pour the warm peanut butter mixture over the toasted oats and stir to combine.
  5. Mix in the dried cranberries, chia seeds, and shaved coconut until everything is well incorporated.
  6. Line an oven dish or baking dish with baking paper. Transfer the mixture, pressing it down firmly and evenly.
  7. Chill in the fridge overnight. The next day, cut into 12 bars.
