– 3 bell peppers
– 1 large onion
– 1 garlic clove
– 4 waxy potatoes

– 300 g diced beef

– 1 liter beef stock
– 1 bay leaf

Instructions
Halve the peppers, remove seeds, and slice into strips. Peel and chop the onion. Crush the garlic. Peel potatoes and cut into cubes.
Heat butter in a large pot over medium-high heat. Brown the diced beef on all sides for 5 minutes. Add onion, peppers, garlic, and tomato purée; sauté 3 minutes. Sprinkle in flour and paprika; stir 1 minute. Add stock and bay leaf; bring to a boil, stirring.
Reduce heat, cover, and simmer gently for 2 hours. Add potatoes in the last 10 minutes. Remove bay leaf; season with salt and pepper. Serve in 4 bowls with French bread.
