Ingredients for 4 servings:
– 1 small round pumpkin
– 1 small butternut squash (or 1 large round pumpkin)
– 2 onions
– Garlic
– 200 ml coconut milk
– Ginger

How to make it:
Cut the pumpkin into large pieces (no need to peel) and finely chop the onions. Mince a piece of ginger. Place everything in a large saucepan, covered just with water. Press in a clove of garlic and bring to a boil. Simmer gently until tender. Remove from heat, drain the liquid into another pan or bowl, and let both cool slightly. Blend the vegetables until smooth, gradually adding liquid to reach your desired consistency. Return to the pan, stir in coconut milk, and season with extra garlic or pepper if needed. Serve hot!
