Recipe:Dr. Megan Rossi:Cashew Chia Tarts with Lemon Curd

Love goes through the stomach, happiness through the gut, says Megan Rossi (31). In her book 'Eating happiness', the Australian nutritionist gives tips for a healthy gut and a better mood. Here's an extra recipe from her:cashew chia tarts with lemon curd.

For 16 pieces

Ingredients:

  • 65 g cashew nuts
  • 30 g chia seeds
  • 25 g dried coconut
  • 40 g oat flakes
  • 4 medjool dates (approx. 60 g pitted), chopped
  • Top:
  • 70 ml fresh lemon juice (approx. 2 lemons)
  • 1 tsp grated lemon zest (plus extra for garnish)
  • 3 tbsp honey, or sweetener of your choice
  • 10 g arrowroot meal
  • 170 g thick yogurt

Preparation

  • Preheat the oven to 140°C hot air/160°C.
  • Put all the basic ingredients in a blender, add 60 ml of water and puree until lightly mixed. Roll the mixture over a work surface with your hands to get a sticky dough. Place the dough in the fridge for 10 minutes, until it is firm.
  • In the meantime, grease mini muffin tins with an oil of your choice.
  • Press a tablespoon of dough (about 15g) into each cavity of the muffin cups. Use your finger to spread it evenly over the bottom and side.
  • Bake the pie shells in the oven for about 15 minutes, until they are golden brown. Let them cool.
  • Meanwhile, combine the lemon juice, grated zest, honey and arrowroot flour in a small saucepan over low heat. Stir vigorously with a wooden spoon until you have a thick jelly. Remove the jelly from the heat and let it cool for a while (1-2 minutes). Stir in the yogurt to get a thick liquid mixture. Taste and add more lemon if necessary.
  • Let the pie shells cool down completely. Spoon in the curd and put the tarts in the fridge for at least 4 hours, until the curd has set. Garnish with some extra grated lemon zest.

Hint: Prefer crispy pie shells? First make the lemon curd and let it set in the fridge for 4 hours. Bake the pie shells and let them cool. Spoon the curd into the molds just before serving.
