Break the chocolate into pieces in a saucepan, add the milk, and melt gently over low heat while stirring.
Remove from heat, whisk in the fresh cream until smooth. Stir in the egg yolks until well combined, then add the caster sugar, powdered almonds, and flour. Mix thoroughly for a smooth batter.
Fold in the stiffly beaten egg whites gently.
Pour into a buttered mold and bake for 25 minutes at thermostat 6-7 (180°C).
