Preheat the oven to 180°C (350°F).
Whisk together the eggs, flour, and milk in a bowl. Season with salt and pepper, then stir in the grated cheese.
Gently melt the rillettes with their fat, then drain off the excess.
Fold the drained rillettes and chopped parsley into the batter.
Pour into a greased loaf tin and bake for 45 minutes, until golden and firm.
