  • 500 grams of plaice fillet
  • 125 grams of green asparagus tips
  • ½ green zucchini
  • ½ yellow zucchini
  • 2 tablespoons olive oil
  • 100 grams ERU Balance Chives
  • 100 ml semi-skimmed milk
  • 400 grams of mashed potatoes
  • 1 tablespoon wheat flour

Preparation

  1. Cut the courgettes into thin slices and mix with olive oil.
  2. Blank the green asparagus for 1 minute in boiling salted water.
  3. Bring the milk to the boil with the ERU Balance Chives and stir into a sauce.

Preparation method

  1. Heat the mashed potatoes and season to taste.
  2. Season the fish with salt and pepper and flour it generously.
  3. Heat a dash of olive oil in a pan and fry the fish until cooked and golden brown.
  4. Grill the zucchini and the green asparagus in the pan and season with salt and pepper.
  5. Place the mashed potatoes on the plate and put the fish on it.
