Break Free from Boring Breakfasts: Santé s Healthy Vegetarian Recipes

Fluffy Buckwheat Pancakes with Blueberries

Ingredients

  • 100 g buckwheat flour
  • 1 egg
  • 150 ml buttermilk
  • Handful of blueberries
  • ½ tsp vanilla powder
  • Fruit of your choice
  • Greek yogurt

Preparation
Whisk together the buckwheat flour, egg, and buttermilk to make the batter. Gently fold in the blueberries and vanilla powder without crushing the berries. Heat oil in a pan and spoon small dollops of batter. Flip when the tops begin to set, and cook the other side. Top with fresh fruit and a dollop of Greek yogurt.
