Ingredients
- 12 green asparagus spears
- 4 spring onions
- 4 salmon fillets (approx. 140 g each)
- 40 ml Greek herb olive oil
- 2 tsp Fine Fish Rub
- 2 sprigs cherry tomatoes (about 16)
- 1 jar Tarragon Bistro Sauce
Instructions
- Bring a pot of water to a boil. Wash asparagus, trim bottoms, halve lengthwise, and blanch for 3 minutes. Rinse with cold water.
- Slice spring onions into thin diagonal rings. Brush salmon fillets with 20 ml Greek herb olive oil and sprinkle ½ tsp Fine Fish Rub on each.
- Preheat oven to 180°C. Arrange salmon and tomatoes on a baking tray; bake 7-8 minutes.
- Heat remaining oil in a pan; sauté spring onions and asparagus briefly. Plate veggies, top with salmon, add tomatoes alongside, stir sauce, and serve beside salmon.
