Squeeze the limes and dilute the juice with water to 750 ml. Wash the prawns in the lime water and drain well. In a shallow bowl, stir the Thai fish sauce into the melted butter. Toss the prawns through the mixture to coat evenly.
Thread the prawns onto water-soaked wooden skewers or metal skewers. Grill over moderately hot coals for 5-8 minutes, until just cooked through. Serve with sweet chili sauce as a dip.
