Cut the onions into half rings. Heat olive oil in a frying pan, sauté the onions and crushed garlic. Cut the chicken pieces smaller and fry with the onions and garlic until golden brown.
Deglaze with wine and stock. Slice the gingerbread, spread with mustard, and add to the sauce, pressing down lightly. Add soy sauce, bay leaf, cloves, thyme, pepper, and simmer for 30 minutes.
Stir once gingerbread dissolves, check thickness—add more gingerbread if too thin, or wine/stock if too thick.
Stir in cocoa powder and hash seasoning. Simmer 5 more minutes, remove bay leaf, and serve.
