Barbecue season calls for bold flavors and fresh twists on classics. We've perfected grilling a whole cauliflower to smoky perfection, paired with a zesty homemade green herb sauce that elevates any cookout.
Ingredients
Serves 4
- 1 cauliflower
- 12 tbsp Olio di Oliva Aglio
- ¼ bunch of basil (about 8 sprigs)
- ¼ bunch of parsley (about 8 sprigs)
- 80 g aged cheese
- 4 tbsp Vadouvan Bistro Sauce
- Juice of half a lemon
- Salt
- 2 tbsp Lemon & White Pepper Seasoning
Preparation
- Preheat your barbecue to 180°C.
- rub the cauliflower with 4 tbsp Olio di Oliva Aglio and sprinkle with 2 tbsp Lemon & White Pepper Seasoning. Place on the BBQ and roast for about 40 minutes, turning regularly until evenly browned on all sides.
- For the green herb sauce, blend the basil, parsley, lemon juice, salt, and 8 tbsp Olio di Oliva Aglio until smooth.
- Cut the cauliflower into pieces. Drizzle with Vadouvan Bistro Sauce and green herb sauce, grate aged cheese over top, and finish with Lemon & White Pepper Seasoning.
