Grilled Whole Cauliflower with Vibrant Green Herb Sauce: A BBQ Must-Try

Barbecue season calls for bold flavors and fresh twists on classics. We've perfected grilling a whole cauliflower to smoky perfection, paired with a zesty homemade green herb sauce that elevates any cookout.

Ingredients
Serves 4

  • 1 cauliflower
  • 12 tbsp Olio di Oliva Aglio
  • ¼ bunch of basil (about 8 sprigs)
  • ¼ bunch of parsley (about 8 sprigs)
  • 80 g aged cheese
  • 4 tbsp Vadouvan Bistro Sauce
  • Juice of half a lemon
  • Salt
  • 2 tbsp Lemon & White Pepper Seasoning

Preparation

  1. Preheat your barbecue to 180°C.
  2. rub the cauliflower with 4 tbsp Olio di Oliva Aglio and sprinkle with 2 tbsp Lemon & White Pepper Seasoning. Place on the BBQ and roast for about 40 minutes, turning regularly until evenly browned on all sides.
  3. For the green herb sauce, blend the basil, parsley, lemon juice, salt, and 8 tbsp Olio di Oliva Aglio until smooth.
  4. Cut the cauliflower into pieces. Drizzle with Vadouvan Bistro Sauce and green herb sauce, grate aged cheese over top, and finish with Lemon & White Pepper Seasoning.
