Shopping List (for 6 people):

  • 3 tablespoons Pure Via™
  • 150 g reduced-fat mascarpone
  • 100 g cottage cheese 0%
  • 1 sheet of gelatine
  • 3 cl of water
  • 1 egg
  • 1 white of egg
  • 12 long finger biscuits
  • 20 cl espresso coffee
  • 2 tablespoons Amaretto
  • 10 g unsweetened cocoa powder

Preparation

  • Soak the gelatine leaf in a bowl of cold water. Bring the water to the boil and dissolve the squeezed gelatine leaf in it.
  • Separate the white and yellow of the egg. Beat the egg yolks with the mascarpone, the quark and 2 tablespoons of Pure Via™. Add the water with the gelatin and mix well.
  • Beat the two egg whites until stiff and fold them carefully into the mascarpone mixture. Add the rest of the Pure Via™ together with the Amaretto to the hot coffee.
  • Cut the biscuits in half and soak them briefly in the coffee mixture. Then arrange them on the bottom of six glasses.
  • Pour a layer of mascarpone mixture on top, and cover again with biscuits. Finally, pour a final layer of mascarpone on top.
  • Chill the glasses in the refrigerator for at least 4 hours. Just before serving, sprinkle each glass with cocoa powder.

Hint
If you don't like coffee or want a fruity twist, replace the coffee with juice from strawberries or raspberries.
