  • 4 slices wholemeal bread
  • 2 slices smoked salmon
  • 4 slices tomato
  • 2 washed lettuce leaves (batavia, romaine, or similar)
  • 50g 0% fat fromage blanc
  • Chives, chopped
  • Juice of 1/4 lemon (green or yellow)

Pro Tip: Assemble your sandwich in the morning before heading to work. Preparing it the night before can make the bread soggy as it absorbs the sauce—not ideal!

Preparation (10 minutes):

  1. Chop the chives and mix with fromage blanc in a bowl. Add a squeeze of lemon juice, a pinch of salt, pepper, and stir well.
  2. Spread the mixture on one side of each bread slice. Layer with lettuce, salmon, 2 tomato slices, then top with another bread slice. Cut in half. Repeat for the second sandwich.
