Ingredients for the chicken:
– 4 chicken breasts
– 100 grams grated Milner Masterpiece cheese
– Cherry tomatoes, halved
– 1 teaspoon fresh thyme
– 6 slices Parma ham
For the savoy cabbage:
– 1.5 tablespoons olive oil
– 1 large garlic clove, crushed
– 400 grams savoy cabbage, finely chopped
– Lemon juice, to taste
Step-by-step instructions:
– Preheat the oven to 200°C. Slice each chicken breast vertically to form a pocket, without cutting all the way through.
– In a bowl, combine the grated cheese, halved cherry tomatoes, thyme, salt, and pepper.
– Stuff each chicken breast with some of the mixture.
– Wrap 1.5 slices of Parma ham around each stuffed breast.
– Heat oil in a frying pan and sear the chicken breasts for 2 minutes on all sides until golden. Transfer to the oven and bake for 12-15 minutes.
– Just before serving, heat olive oil in a wok with crushed garlic. Add savoy cabbage and stir-fry for 2-3 minutes. Finish with a squeeze of lemon juice.
– Divide the cabbage among plates. Slice chicken breasts diagonally and serve atop the cabbage bed.
