As a home cook with years of budget-friendly recipe testing, I've perfected this economical and flavorful poultry blanquette. It's quick to prepare, using simple ingredients, and ideal for daily family meals or casual gatherings with friends. This creamy stew delights kids and discerning palates alike!
4 chicken or turkey cutlets
250g mushrooms
1 large jar of fresh cream
2 tablespoons of flour
2 tablespoons dehydrated chicken stock
Olive oil
Salt and pepper
1. Cut the cutlets into 5 cm long strips.
2. Wash, peel, and slice the mushrooms.
3. In a sauté pan, brown the meat and mushrooms with a drizzle of olive oil.
4. In a bowl, mix the fresh cream, chicken stock, and flour.
5. Season with salt and pepper.
6. Add this mixture to the sauté pan and stir well with the meat and mushrooms.
7. Simmer for 25 minutes over low heat.
Serve with fresh tagliatelle for a complete meal.
Sometimes I swap poultry for pork tenderloin – just as budget-friendly and yields a tasty variation.
For seafood fans, try monkfish or cod in a fish blanquette, served with potatoes or rice.
