1. Dissolve the yeast in 400 ml lukewarm water.
2. Sift the flour and salt onto a work surface to prevent lumps, then make a well in the center.

4. Knead the dough in a bowl or on a board until smooth.

1. Preheat oven to 210°C.
2. Peel and finely chop the onion; sauté in a drizzle of olive oil until softened.
3. Wash, peel, and dice the tomatoes. Add to the pan with onions over low heat for 5 minutes, stirring occasionally.

4. Cook until tomato juices evaporate. Season with salt and pepper; set aside.
5. Drain and slice the mozzarella into cubes or strips.
6. Spread sauce on dough, add mozzarella, and drizzle with olive oil.
