Ingredients for 4 People:

  • 2 cans of natural tuna
  • 2 lemons
  • 3 shallots
  • ½ green pepper
  • ½ yellow pepper
  • 1 egg yolk
  • 1 small sprig of chives and parsley
  • 4 garlic cloves
  • 25 cl of oil
  • Salt and pepper

Preparing the Aioli

I peel the garlic cloves and mash them into a smooth paste.

Add the egg yolk, a pinch of salt, and pepper. Slowly drizzle in the olive oil while whisking to emulsify, just like making mayonnaise.

Stir in a teaspoon or two of warm water and a squeeze of lemon juice for perfect consistency.

Transfer to a sauce boat and chill until ready.

Preparing the Tuna Tartare

In a bowl, flake the natural tuna with a fork and toss with lemon juice. Refrigerate for two hours to marinate.

Finely dice the peppers, chop the herbs and shallots, then mix everything into the tuna. Season to taste.

Mold into small tartare portions and plate on a bed of greens for a vibrant touch. Serve chilled with the aioli. Enjoy!
