My Italian friend shared this gem with me—it's straightforward, flavorful, and incredibly budget-friendly.

For 4 servings:
- 500 g pasta, penne or spaghetti
- 450 g frozen or fresh zucchini (in season)
- 1 clove garlic
- Olive oil
- Salt & pepper
1. Cook the pasta in a large pot of salted boiling water for 8-10 minutes (8 minutes for al dente).
2. Meanwhile, blanch the frozen or fresh zucchini in boiling salted water for 5 minutes (2-3 minutes if fresh).
3. In a skillet, sauté the finely chopped garlic in a drizzle of olive oil until golden.
4. Drain the zucchini.
5. Add them to the skillet and sauté until nicely grilled.
6. Add the drained pasta to the skillet. Toss together, season with salt and pepper.
7. Simmer for 2 minutes over low heat.
Your zucchini pasta is ready to serve! :-)
