Gourmet Fig and Pancetta Pizza Recipe with Fresh Rosemary Dough

Ingredients

For 4 pizzas

  • 10 g fresh yeast
  • 1 dl DREAM Almond Oat, warmed to lukewarm
  • 7 cl water, warmed to lukewarm
  • 300 g flour
  • ½ tsp salt
  • 1.5 tbsp olive oil
  • 1 handful of flour
  • 2 tbsp olive oil
  • 2 tbsp rosemary, finely chopped
  • ¼ tsp chili flakes
  • 4 fresh figs, quartered
  • 8 slices of pancetta
  • Handful of arugula

Instructions

1. Dissolve the yeast in the lukewarm DREAM Almond Oat and water. Let it rest for 10 minutes. In a food processor, combine flour and salt. Add the yeast mixture and olive oil, kneading into a smooth ball. Dust with flour, place in a bowl, cover with plastic wrap, and let rise for 1 hour at room temperature.

2. Punch down the dough to release gases, then let it rest for another 30 minutes.

3. Divide into 4 balls, cover, and rest for 10 minutes. Roll each out thinly with a rolling pin.

4. Preheat your grill. Brush dough rounds with olive oil on both sides and grill 4 minutes per side until golden. Brush tops again with oil, sprinkle with rosemary and chili flakes, then top with figs, pancetta, and arugula.

5. Drizzle with balsamic cream for a bright, tangy finish.
