Mauritian chicken barbecue

Ingredients for 5 people

  • 5 chicken breasts
  • 200ml oyster sauce
  • 5 crushed garlic cloves
  • 1 medium sized red chilli
  • 2 tbsp minced rosemary
  • lemon juice
  • half a crushed pineapple
  • 2 tbsp paprika
  • 2 tbsp runny honey
  • 1 can of beer
  • salt and pepper

Preparation

Score the chicken and set aside.

Remove the seeds from the pepper, cut it very finely and put it with the rest of the ingredients (except the olive oil which we keep for just before cooking). Put all the ingredients in your blender (except honey, oyster sauce and beer) and grind everything. Now put the honey, oyster sauce and half the can and mix. Taste the marinade.

Add salt/pepper if necessary then pour over the chicken and mix well with your hands.

Cover with cellophane and leave in the fridge for at least 2 hours (of course the longer it remains to marinate, the better it will be; ideally do it the night before).

I guarantee you that the smell that emanates from it when it cooks on the barbecue will make your mouth water.
