Preparation
Score the chicken breasts and set aside.
Remove the seeds from the chilli, finely chop it, and combine with the remaining ingredients except the honey, oyster sauce, and beer. Blend until smooth. Stir in the honey, oyster sauce, and half the can of beer. Taste and adjust salt and pepper as needed.
Pour the marinade over the chicken and massage it in with your hands. Cover with plastic wrap and refrigerate for at least 2 hours—or ideally overnight for maximum flavor.
Grill on a hot barbecue until cooked through. The irresistible aroma will have everyone salivating.
