Ingredients (serves 6)

Instructions
Wash the vegetables, peel the carrots, and cut them into thin matchsticks. Finely chop the cabbage and Chinese cabbage leaves.
Cut the chicken breast into small pieces and sauté until cooked through.
Whisk the eggs with a pinch of salt and cook into a thin omelet. Slice into strips.
Heat oil in a wok and sauté the vegetables. Add the noodles and stir-fry. Pour in soy sauce and red wine, mixing well.
Incorporate the cooked chicken, season with salt and pepper, and stir-fry briefly.
Finish by sprinkling with chives and omelet strips.
