In a pan, combine water or milk, butter pieces, and a pinch of salt.
Heat on low fire.
Once butter melts, add flour all at once. Stir vigorously with a wooden spoon until smooth and the dough dries out, like boiling dry.
Remove from heat and cool slightly.
Whisk 3 eggs in the flour bowl.
Add eggs to dough; stir firmly until homogeneous.
Preheat oven to 170°C.
Line baking tray with paper; pipe or spoon dough balls, spacing them apart as they expand.
Bake 18-20 minutes until golden and cooked through.
For the filling:
Cook chicken breast as for soup.
