80g pasteurized egg whites
160g granulated sugar
240g unsalted butter, at room temperature
50g white Milka chocolate, melted
Heat sugar and egg whites over a bain-marie, stirring until sugar dissolves (rub between fingers to check).
Whip to stiff peaks off heat. Switch to paddle; gradually add butter until creamy. Mix in melted chocolate.

45ml heavy cream
