Cyril Lignac's Irresistible Apple Cinnamon Cake: A Gourmand Croquant Masterpiece

Apples and cinnamon are a timeless duo that awakens the senses, but when celebrated chef Cyril Lignac adds his expert touch, the result is an irresistibly soft cake you'll crave again and again.

Ingredients

  • Butter for greasing the mold

Batter

  • 165g brown sugar
  • 1 egg
  • 20cl milk
  • 1 tsp lemon juice
  • 1 vanilla pod
  • ½ tsp baking soda
  • 170g flour
  • 2 apples, cut into sticks (2cm long, 0.5cm wide, 0.5cm thick)

Topping

  • 50g sugar
  • 2 generous pinches of cinnamon
  • 45g melted butter

Utensils
– 1 cutting board + 1 paring knife
– 1 mixing bowl + 1 hand mixer + 1 spatula
– 1 baking tray + 1 silicone mat

Preparation

  • Preheat the oven to 180°C.
  • Combine all batter ingredients in the order listed, stirring gently.
  • Pour into a buttered 9cm x 13cm mold.
  • Mix sugar, cinnamon, and melted butter for the topping; sprinkle over the batter.
  • Bake for 30 minutes. Serve with honey butter.
