Ingredients
Caramelized Bananas:
- 1.5 peeled bananas
- 5g butter
- 15g sugar
The Cake Batter:
- 2.5 bananas, peeled and cut into pieces
- 1.5 tbsp chia seeds
- 90g rice milk or other vegetable milk
- ½ lemon juice
- 8g baking powder
- 210g rice flour
- 90g sugar
- 1 tonka bean
- 40g melted butter
- 25g sesame oil
Preparation
- Scrape the bananas for caramelizing to remove starch, then cut lengthwise in half. In a frying pan, melt butter until colored, add bananas, sear, sprinkle with sugar, flip, and finish caramelizing. Set aside cut-side up.
- In a bowl, mash bananas, mix in chia seeds, rice milk, and lemon juice. Add flour-baking powder mix, sugar, grated tonka bean to taste, then melted butter and sesame oil. Stir until smooth.
- Pour batter into a cake tin, top with caramelized bananas, and bake 25 minutes. Cool fully before unmolding to keep bananas in place.
