Fill with batter, then use your thumb on the rim to create a small hood. "That's what makes the soufflé climb straight up," he explains.

Ingredients:

  • 250g dark chocolate
  • 50g butter
  • 8 eggs
  • 80g caster sugar

Steps:

  1. Preheat oven to 180°C.
  2. Melt chocolate and butter in a bain-marie.
  3. Separate egg whites and 3 egg yolks in a bowl.
  4. Whisk 8 egg whites to stiff peaks, add sugar to form a meringue.
  5. Incorporate yolks and beat briefly.
  6. Pour melted chocolate into meringue; fold in gently with spatula, a quarter at a time.
  7. Butter molds bottom-to-top with a pastry brush.
  8. Fill molds nearly to top. Thumb the rim to form hood for lift-off.
  9. Bake 10 minutes at 180°C.
