At the microphone of RTL , chef Cyril Lignac shared his technique for mastering chocolate soufflé to perfection. Success lies in buttering the mould but also in a small very precise gesture . To do this, simply butter the individual mold from bottom to top so as to help the soufflé rise. We then pour the preparation, we fill the mold well then using the thumb, placed on the edge, we turn it to form a small hood . It is the latter that will allow the cake to take off. "And it's because we're going to take off with the thumb that the soufflé will go straight up. » adds Cyril Lignac.

Cyril Lignac's unmissable chocolate soufflé recipe

To make an airy chocolate soufflé for 4 people, you will need:

  • 250g dark chocolate
  • 50g butter
  • 8 eggs
  • 80 g caster sugar

Preparation steps:

  1. Preheat the oven to 180°C.
  2. In a bain-marie, melt the chocolate with the butter.
  3. In a bowl separate the egg whites and 3 egg yolks.
  4. In a mixing bowl, whisk the 8 egg whites. When they are well whipped, add the sugar to meringue them.
  5. Add the egg yolks and continue beating for a few more seconds.
  6. In a bowl, pour the melted chocolate then, using a spatula, gently fold in a quarter of the egg whites. Mix then add the rest little by little.
  7. Butter the molds from bottom to top with a kitchen brush.
  8. Pour the soufflé mixture into the molds almost to the top. With your thumb, on the edge, turn the mold to create a small hood that will take off the soufflé and make it rise straight up.
  9. Bake the soufflés in the oven at 180°C for 10 minutes.
