Ingredients
- 200 g soft butter
- 75 g sugar
- 1 ripe banana
- 5 eggs
- 200 g self-raising flour
- 2 apples
- 2 tsp cinnamon
- 1 tsp biscuit and gingerbread spices
- Pecans, as many as you like, roughly chopped
Preparation Method
- Preheat your oven to 160°C.
- Beat the butter with the sugar until creamy, then add the eggs one at a time, mixing until smooth. Fold in the self-raising flour, cinnamon, and spices. Stir in the chopped pecans.
- Pour the batter into a greased cake tin. Slice the apples and arrange them on top. Bake for about 60 minutes. Test at 50 minutes with a skewer – it's done when it comes out clean and dry.
- Let the cake cool briefly in the tin, then transfer to a wire rack to cool completely.
