Ingredients

  • 200 g soft butter
  • 75 g sugar
  • 1 ripe banana
  • 5 eggs
  • 200 g self-raising flour
  • 2 apples
  • 2 tsp cinnamon
  • 1 tsp biscuit and gingerbread spices
  • Pecans, as many as you like, roughly chopped

Preparation Method

  1. Preheat your oven to 160°C.
  2. Beat the butter with the sugar until creamy, then add the eggs one at a time, mixing until smooth. Fold in the self-raising flour, cinnamon, and spices. Stir in the chopped pecans.
  3. Pour the batter into a greased cake tin. Slice the apples and arrange them on top. Bake for about 60 minutes. Test at 50 minutes with a skewer – it's done when it comes out clean and dry.
  4. Let the cake cool briefly in the tin, then transfer to a wire rack to cool completely.
