Make Cyril Lignac's Delicious Candied Onion Burger with Tartar Sauce

Ingredients For the Burger:
  • 4 burger buns, halved and toasted
  • 360g ground beef
  • 100g ground pork
  • 1 tbsp celery salt
  • 1 tbsp ground cinnamon
  • 1 tsp star anise (wild anise)
  • 1 tsp ground mustard
  • ¼ bunch chopped cilantro
  • 2 Roscoff pink onions
  • 30g butter
  • 1 tbsp sugar
  • 3 sweet and sour pickles
  • A few pickled jalapeño pepper rings
  • 4 slices cheddar cheese
  • 2 romaine lettuce leaves
  • Oil, for cooking
For the Tartar Sauce:
  • 2 tbsp mayonnaise
  • 1 tbsp Greek yogurt
  • 3 chopped pickles
  • 1 tbsp chopped capers
  • ½ tsp chopped black pepper
  • 1 spring onion, finely chopped
  • 1 tsp chopped parsley
  • Fine salt and ground pepper, to taste
Preparation Steps
  • In a small sauté pan, heat a dash of oil and a little butter. Add sliced onions and caramelize over medium heat. Season with salt and add sugar. Set aside.
  • In a bowl, mix mayonnaise and Greek yogurt for the tartar sauce. Add chopped pickles, capers, pepper, spring onion, and parsley. Season to taste. Refrigerate.
  • In a large bowl, combine ground beef, pork, caramelized onions, spices, and cilantro. Season with salt and pepper. Form into 4 patties using a bun-sized cutter or by hand. Chill.
  • Heat a pan with oil and butter. Sear patties on both sides until cooked to your liking.
  • Finely shred the romaine lettuce.
  • Assemble: Spread tartar sauce on bun bottoms, add lettuce, patty, cheese slice, jalapeño rings, pickle slices, more caramelized onions, and top buns.
