Cyril Lignac's Stracciatella White Chocolate Mousse: A Gourmand Croquant Delight

General Information
– Preparation time: 12 minutes
– Cooking time: 20 minutes
– Serves: 4 people

Ingredients
– 125g white chocolate
– 10cl + 50cl full-cream 35% cream
– 30g mascarpone
– 20g icing sugar
– 1 vanilla pod
– 40g + 80g dark chocolate shavings

Preparation

– Melt the white chocolate with the 10cl of cream in a bain-marie, stirring until smooth.
– In a very cold bowl, combine the 50cl of cream, mascarpone, and vanilla pod seeds. Whip into a cream, then incorporate the icing sugar.
– Gently fold the whipped cream into the white chocolate mixture, followed by 40g of chocolate shavings. Divide into ramekins, top with remaining shavings, and refrigerate until chilled.
