Ingredients
- 2 large meringues or 4 to 6 small meringues
- 20g vanilla icing sugar or vanilla sugar
- 200g 35% full-fat cream
- 250g strawberries, quartered
- 1 tbsp icing sugar
- 100g strawberry purée
Preparation
- In a bowl, gently toss the quartered strawberries with the icing sugar.
- In a chilled bowl, whip the cream with the vanilla icing sugar until soft peaks form. Fold in the broken meringues and three-quarters of the strawberries using a spatula—handle gently to keep it light and airy.
- Divide the mixture into glasses, top with the remaining strawberries and strawberry purée. Crumble any extra meringue on top for added crunch.
