Craving hearty comfort food? These flavorful Mexican tacos swap meat for jackfruit, a versatile fruit that mimics pulled pork texture perfectly – a staple in vegan cooking from our tested recipes.
30 minutes prep + 30 minutes marinating
Trim jackfruit strips if needed, then toss with Mexican spice mix and 1 tablespoon oil. Marinate for 30 minutes to infuse flavors.
Finely chop onion and garlic; squeeze limes. Heat 1 tablespoon oil in a pan, sauté onion and garlic until translucent. Add jackfruit, stir-fry until golden brown.
Pour in stock, brown sugar, and half the lime juice. Simmer 5 minutes. Season with salt, paprikas, chili flakes, and any leftover marinade.
Shred lettuce. Rinse and drain beans. Halve avocado, remove pit, slice, and toss with remaining lime juice to prevent browning.
Warm tacos per package instructions. Fill with jackfruit mix, top with beans, avocado, and lettuce. Serve immediately for the best taste.
