No Ripe Bananas? Here's a Quick Fix

Speed up ripening by baking unripe bananas at 150°C for 30 minutes. They'll emerge soft and sweet inside, ready for your batter.

Ingredients

  • 3 ripe bananas
  • 3 eggs
  • 150 grams almond flour
  • 55 grams coconut flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 tablespoon honey
  • 1 tablespoon vanilla extract
  • 2 tablespoons coconut oil
  • Pinch of salt

Step-by-Step Instructions

  • Preheat oven to 180°C. Grease a cake tin with coconut oil.
  • Mash bananas with coconut oil, honey, vanilla, and eggs until smooth. Stir in almond flour, coconut flour, baking powder, salt, and cinnamon until fully combined. The batter will be thick—pour into the prepared tin.
  • Bake 30-35 minutes until golden and a skewer inserted comes out clean.
  • Cool in tin for 10 minutes, then transfer to a rack for 30 more minutes.
