Chef Juan Arbelaez's Egg-Free, Butter-Free Banana Bread Recipe – Quarantine Baking Essential

Ingredients:

  • 250g flour
  • 3 bananas ("the more damaged, the better the taste")
  • 2 yogurts
  • 1 packet of baking powder
  • 1 tbsp honey (replace sugar with honey)
  • 2 tbsp olive oil
  • 1 lemon
  • 1 pinch of fleur de sel

Instructions:

  • Peel the bananas, then mash them with a fork.
  • Add the yoghurts.
  • Mix to obtain a fairly creamy and homogeneous texture.
  • Add a (large) tablespoon of honey and mix.
  • Wash the lemon well and remove the zest to add to the mixture.
  • Mix the lemon then cut it in half, and collect its juice to add it to the mixture.
  • Add the flour little by little while whisking to obtain a homogeneous mixture.
  • Add a pinch of fleur de sel.
  • Add two tbsp of olive oil.
  • Add the sachet of baking powder and mix.
  • In an oiled mold (not buttered), pour all the preparation.
  • Bake in a preheated oven at 180 degrees for about 20 minutes.
  • Push a knife into the center of the banana bread to check for doneness. If any paste remains on the knife, cook a little longer.
