"The secret to the best banana bread is using very ripe, blackened bananas", he explained. Overripe bananas are ideal – stock up now!
Ingredients:
- 250g flour
- 3 bananas ("the more damaged, the better the taste")
- 2 yogurts
- 1 packet of baking powder
- 1 tbsp honey (replace sugar with honey)
- 2 tbsp olive oil
- 1 lemon
- 1 pinch of fleur de sel
Instructions:
- Peel the bananas, then mash them with a fork.
- Add the yoghurts.
- Mix to obtain a fairly creamy and homogeneous texture.
- Add a (large) tablespoon of honey and mix.
- Wash the lemon well and remove the zest to add to the mixture.
- Mix the lemon then cut it in half, and collect its juice to add it to the mixture.
- Add the flour little by little while whisking to obtain a homogeneous mixture.
- Add a pinch of fleur de sel.
- Add two tbsp of olive oil.
- Add the sachet of baking powder and mix.
- In an oiled mold (not buttered), pour all the preparation.
- Bake in a preheated oven at 180 degrees for about 20 minutes.
- Push a knife into the center of the banana bread to check for doneness. If any paste remains on the knife, cook a little longer.
