Ditch Guacamole: Santé s Annemiek Shares Her Easy Broccoli Dip Recipe

Ingredients

  • 250 g broccoli
  • 60 ml Greek yogurt
  • 1/2 garlic clove, crushed
  • 1/4 red pepper, seeds removed, finely chopped
  • 1 tbsp red onion, finely chopped
  • 1/2 tbsp fresh coriander, finely chopped
  • 1/2 lime
  • 1 plum tomato

Equipment needed: immersion blender

How to Make It

  • Cut the broccoli into florets and cook for 12 minutes. Drain and transfer to a tall bowl. Let cool.
  • Add the yogurt, garlic, pepper, red onion, and coriander. Squeeze the lime over the top and add ½ teaspoon salt.
  • Blend with an immersion blender until smooth and creamy.
  • Taste and adjust seasoning with pepper, extra salt, and/or lime juice as needed.
  • Cut the tomato into small cubes and gently fold through. Refrigerate until serving to allow it to firm up further.
