Ideal to pair with drinks or crudites.
Ingredients
- 250 g broccoli
- 60 ml Greek yogurt
- 1/2 garlic clove, crushed
- 1/4 red pepper, seeds removed, finely chopped
- 1 tbsp red onion, finely chopped
- 1/2 tbsp fresh coriander, finely chopped
- 1/2 lime
- 1 plum tomato
Equipment needed: immersion blender
How to Make It
- Cut the broccoli into florets and cook for 12 minutes. Drain and transfer to a tall bowl. Let cool.
- Add the yogurt, garlic, pepper, red onion, and coriander. Squeeze the lime over the top and add ½ teaspoon salt.
- Blend with an immersion blender until smooth and creamy.
- Taste and adjust seasoning with pepper, extra salt, and/or lime juice as needed.
- Cut the tomato into small cubes and gently fold through. Refrigerate until serving to allow it to firm up further.
